Ingredients

Scale
  • 1 large onion, finely chopped
  • Olive oil, for cooking
  • 3 large potatoes, peeled and cubed
  • Salt and black pepper, to taste
  • 3 chicken breasts, boneless and skinless
  • Red pepper flakes, to taste
  • 2 eggs, beaten
  • 200 ml of cream
  • 1 teaspoon curry powder
  • Provençal herbs, to taste

Kitchen Tools

  • Skillet
  • Mixing bowl
  • Whisk
  • Cutting board
  • Knife

Instructions

Step 1: Prepare the Ingredients

Start by heating a generous amount of olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent. Meanwhile, season the cubed potatoes with salt and black pepper. Add them to the skillet and cook until they start to soften, about 15 minutes.

Step 2: Cook the Chicken

While the potatoes are cooking, season the chicken breasts with salt, black pepper, and red pepper flakes. In a separate pan, heat some olive oil and cook the chicken until golden and cooked through, about 7 minutes per side. Once done, slice the chicken into strips and set aside.

Step 3: Combine and Bake

Preheat your oven to 375°F (190°C). In a mixing bowl, whisk together the eggs, cream, curry powder, and a pinch of Provençal herbs. Pour this mixture over the potatoes in the skillet. Arrange the sliced chicken on top. Transfer the skillet to the oven and bake for 20 minutes, or until the top is golden and bubbly.

Step 4: Final Touches

Remove the skillet from the oven and let it sit for a few minutes before serving. This allows the flavors to meld beautifully.
