Instructions

    1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with nonstick cooking spray.
    2. Mix apples with sugar and cinnamon: In a medium bowl, combine the diced apples with brown sugar and cinnamon. Set aside to let the flavors meld.
    1. Cream sugar and butter: In the bowl of a stand mixer, cream together the granulated sugar and butter until light and fluffy, about 2-3 minutes.
    2. Add eggs and vanilla: Incorporate the eggs and vanilla extract into the creamed sugar mixture, then add milk and mix until well combined.
    3. Combine dry ingredients: Gradually mix in the flour, baking powder, and salt until just combined. Be careful not to overmix.
