- ½ cup light brown sugar, packed
- 1 tablespoon ground cinnamon
- ⅔ cup granulated sugar
- ½ cup unsalted butter, room temperature
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- ½ cup whole milk, room temperature
- 1 ½ cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon kosher salt

- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with nonstick cooking spray.
- Mix apples with sugar and cinnamon: In a medium bowl, combine the diced apples with brown sugar and cinnamon. Set aside to let the flavors meld.

- Cream sugar and butter: In the bowl of a stand mixer, cream together the granulated sugar and butter until light and fluffy, about 2-3 minutes.
- Add eggs and vanilla: Incorporate the eggs and vanilla extract into the creamed sugar mixture, then add milk and mix until well combined.
- Combine dry ingredients: Gradually mix in the flour, baking powder, and salt until just combined. Be careful not to overmix.
- Fold in apples: Stir in three-quarters of the apple mixture, reserving some for topping.
- Bake: Pour the batter into the prepared loaf pan, spreading evenly. Top with the reserved apples. Bake for about 65-70 minutes, or until a toothpick inserted comes out clean or with few crumbs.
