Yummy Banana Coconut Muffins

These naturally sweetened banana coconut muffins are a real treat. I bet you can’t tell they’re made with 100% whole wheat flour!

 

Ingredients
  • 3 ripe bananas
  • ¼ cup coconut oil
  • 1 cup Splenda
  • 2 egg whites
  • 1 teaspoon vanilla
  • ½ cup quick oats
  • ¼ cup unsweetened coconut flakes
  • ¾ cup whole wheat flour
  • 1 teaspoon salt
  • 2 teaspoons baking powder
Instructions
  1. Preheat oven to 375 degrees.
  2. Line muffin tin with cupcake liners.
  3. In a large bowl, beat together bananas, coconut oil, eggs, and vanilla until smooth.
  4. Mix in sugar and oats.
  5. Sift flour, salt, and baking powder into the wet mixture. Fold until just moistened.
  6. Fill muffin tins ¾ way full.
  7. Bake at 375 for 15-17 minutes or until golden brown and toothpick inserted into muffin comes out clean.
