Watermelon Jalapeno Cubes with Honey Lime Dressing




24 slice (1 1/2 inch square) queso fresco cheese
1 small seedless watermelon, cubed
2 jalapeno pepper, thinly sliced
2 limes, juiced
1 tbsp coconut oil, melted
2 tbsp honey
1 tbsp flaked sea salt
24 toothpicks, or skewers


  1. Place a slice of cheese on top of each watermelon cube, top with a slice of jalapeno, and skewer with a toothpick.
  2. In a small bowl, whisk together lime juice, coconut oil, and honey. Drizzle dressing over the top of each cube and sprinkle with sea salt.
