I thought this was a neat recipe to make!
My spouse had a craving for medicinal chocolate (he’s under the weather), so I pinged the internet for a quick microwave “from scratch” solution — and I found this recipe — It’s actually quite simple and very tasty! I even cheated and used regular sugar instead of confectioner’s, and I don’t at all mind the crystalline crunch of the sugar crystals. Whoooohooo, success — and with just 2 minutes microwave cooking time!
This recipe was included in the very first microwave book I ever bought. I rarely use the microwave any more, except for heating up pillows, but I still plan to use it for this fudge during the holidays. It really is the first fool-proof fudge I’ve ever made, and always gets rave reviews. If anything, it is just a bit “grainier” (sugar-like) than a traditional cooked fudge, but I’m fine with that. Not sure about the comment that said it had a flour taste, because unless someone tweaked the recipe, it has no flour in it at all (nor does any fudge recipe that I know.)
TWO-MINUTE MICROWAVE FUDGE RECIPE
To Make this Recipe You’Il Need the following ingredients:
1 lb powdered sugar
2/3 cup cocoa
1/4 teaspoon salt
1/4 cup milk
2 teaspoons vanilla
1/2 cup butter or 1/2 cup margarine
1/2 cup chopped nuts (optional)
Sift powdered sugar, cocoa, and salt into a 1 quart microwave safe bowl.
Stir in milk and vanilla.
Place butter on top.
Microwave on high, 2 minutes.
Beat with wooden spoon until smooth.
Stir in nuts (OPTIONAL).
Spread in 8 X 8 X 2 inch baking pan.
Chill about 1 hour or until firm.
Cut into pieces.
