Sweet Potato Casserole

A delicious mashed sweet potato casserole with a crunchy pecan topping. Easy to make-ahead, this recipe baked in only 30 minutes.

Ingredients

5 sweet potato, peeled and sliced
12 cup brown sugar, packed
14 cup low fat margarine
2 tbsp orange juice
2 pinch ground cinnamon
1 package (10.5 ounce) miniature marshmallows

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Boil sliced sweet potatoes in water until tender. Drain.
  3. In a large bowl, blend the potatoes until creamy. Stir in the butter, brown sugar, orange juice to taste and a dash of ground cinnamon.
  4. Spread the sweet potato mixture into a 9×13 inch pan. Sprinkle the miniature marshmallows over the top and bake at 350 degrees F (175 degrees C) until golden brown.
