3 boneless skinless chicken breasts
2 ounces cheddar cheese, cubed
½ cup fresh basil leaves
1 cup flour in bowl
2 beaten eggs in bowl
1 cup seasoned bread crumbs in bowl
2 tbsp olive oil
1. Preheat oven to 425.
2. Slice a pocket into each chicken breast, on the side that is shorter and wider. Use hands if needed to open up pocket while maintaining chicken shape.
3. Stuff each breast with cheddar and basil, and secure open pocket with toothpick.
4. Roll each breast first in flour, then in egg bowl, then roll again in breadcrumbs, so that chicken is well coated. Put breasts in oven-safe dish and bake on 425 for 20 minutes, or until chicken is fully cooked and crust is browned on outside.
