Strawberry-Balsamic Salad with Arugula

A rich source of iron and vitamins A and C, arugula is nonetheless in desperate need of balancing, here, with aged balsamic vinegar, walnuts and strawberries, another one of springtime’s jewels.




1 cup strawberry
1 tbsp balsamic vinegar
1 tbsp extra-virgin olive oil
2 oz goat cheese
2 tbsp slivered almonds toasted
4 oz arugula



  1. Toss strawberries with half of the balsamic vinegar and set aside.  Mix remaining vinegar and oil together in another bowl.  Season vinaigrette with salt and pepper.  Toss arugula with vinaigrette and place strawberries, goat cheese and almonds on top.  Serve immediately.
