Southern Style Dirty Rice

Dirty Rice is a spicy and flavorful Cajun rice dish made from white rice. It gets its “dirty” color from finely chopped chicken livers and ground beef or pork.  The chicken livers give it such a deep flavor. Even if you think you don’t like chicken livers, you should try adding them. Since they are finely chopped, the overall dish doesn’t have much of a chicken liver flavor.

Cajun rice or “dirty rice” is a well loved New Orleans dish and a Louisiana classic, with as many different recipes as there are cooks.
Traditional Dirty Rice uses chopped chicken livers which gives it a distinctive flavor and a dark color dubbing it “dirty” rice. It typically includes the trinity with da’ Pope, which is diced bell pepper, celery, onion, and garlic. This is my favorite version.
