2 lb (907 g) ground turkey
1/2 cup (125 mL) dry bread crumbs
1/2 cup (125 mL) water chestnuts, drained, rinsed and diced
3 green onions, diced
3 tbsp (45 mL) chopped fresh cilantro
2 cloves garlic, minced
1 tbsp (15 mL) grated fresh ginger
1 tbsp (15 mL) sodium-reduced soy sauce
2 tsp (10 mL) sesame oil
1-1/2 cups (375 mL) pineapple juice
1 cup (250 mL) bottled strained tomatoes
1/4 cup (60 mL) packed brown sugar
2 tsp (10 mL) sodium-reduced soy sauce
2 tbsp (30 mL) cornstarch
Cover and cook on low for 6 to 8 hours.
Whisk cornstarch with 1/4 cup cold water until smooth; whisk into slow cooker. Cook, covered, on high until thickened, about 15 minutes.
