Shrimp Stuffed Potatoes

A delicious side dish of twice baked potatoes with shrimp.


6 large potato
1 vegetable oil, for coating
8 tbsp butter
2 cup cheddar cheese, grated, plus more for sprinkling
2 cup monterey jack cheese, grated
2 cup sour cream
1 salt
1 pepper
1 lb shrimp , peeled and sauteed
1 paprika



  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Wash and dry potatoes, then gently prick with a fork on the sides. Coat each potato with vegetable oil, place on foil covered pan, and bake for approximately 1 hour.
  3. Place butter in a large bowl. Remove potatoes from the oven and slice each in half horizontally. Gently scoop out the insides and place in the bowl. Using a mixer on high, mix potatoes, butter, sour cream, salt, and pepper. Fold in shrimp and both cheeses. Gently stuff mixture back into the potato shells, making sure not to break them. Pile mixture as high as you can on top of the potato shells. Sprinkle each with cheese and paprika for color. Bake for approximately 20 to 30 minutes until browned on top.
