120 g of simple crackers (for me “ritz”)
60 g butter ointment
1 large can of natural tuna
1 tbsp olive oil
1 tablespoon lemon juice
12 cl liquid cream (minimum15% fat)
Mix the crackers, butter and paprika.
Place in presentation circles (or mold, or verrines) and pack well.
Toss the tuna with a fork.
Add the cs of oil and the balsamic vinegar (Drip to dose according to your tastes).
Distribute in the circles, on the biscuit base and squeeze well.
Mix the avocado flesh with lemon juice and cream.
Add salt, pepper and a little paprika (a few pinches, you have to drip!).
Mix again until a homogeneous mixture is obtained.
Place in a socket pocket (or siphon) and set aside.
When serving, remove the presentation circles and lay the avocado mousse on the cheesecakes.
