Pecan Pie Cobbler Recipe

Ingredients:

1 cup light corn syrup
1 cup brown sugar
½ cup (1 stick) butter, melted
1 tsp vanilla extract
4 large eggs, lightly beaten
2 cups chopped pecans
1 box refrigerated pie crusts (or homemade)
Optional: vanilla ice cream for serving

Instructions:

Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.

Roll out one pie crust and place it in the bottom of the dish.

In a bowl, mix corn syrup, brown sugar, melted butter, vanilla, and eggs. Stir in chopped pecans.

Pour half the pecan mixture over the crust.

Add second crust on top and gently press down.

Pour remaining pecan mixture over the top crust.

Bake for 45–50 minutes or until golden and set.

Cool slightly and serve warm—great with a scoop of vanilla ice cream!
