Original Kentucky Hot Brown Sandwich

Ingredients

 

12 cup butter
12 cup all-purpose flour
3 cup milk
6 tbsp parmesan cheese, freshly grated
1 egg, beaten
2 tbsp heavy cream
1 salt, to taste
1 pepper, to taste
2 lb roasted turkey, sliced
1 tomato, thinly sliced
8 slice white bread, toasted
14 cup parmesan cheese, freshly grated
8 slice bacon, cooked

Directions

 

 

  1. Melt butter in a saucepan over medium heat. Stir in flour and continue to cook, stirring constantly, until the mixture begins to brown slightly. Gradually whisk in milk so that no lumps form, then bring to a boil while stirring constantly. Mix in 6 tablespoons parmesan cheese, then stir in beaten egg to thicken. Do not allow the sauce to boil once the egg has been added. Remove from heat and stir in cream. Season to taste with salt and pepper.
  2. Preheat oven broiler.
  3. Place two slices of toast in the bottom of four individual sized casserole dishes. Evenly distribute turkey among the sandwiches and spoon sauce over each. Top with tomato slices and sprinkle with remaining 1/4 cup parmesan cheese.
  4. Broil for about 5 minutes or until cheese is melted and and starts to brown in spots. Remove from the broiler and place two slices of bacon in a cross shape on top of each sandwich. Serve immediately.
