|4 cup rolled oats|
|1 1⁄4 cup white sugar|
|1 1⁄2 cup unsweetened cocoa powder|
|1 cup butter or margarine, softened|
|2 tbsp strongly brewed coffee|
|1 tsp vanilla extract|
|2 (1 oz each) squares unsweetened baking chocolate, melted|
|1⁄3 cup flaked coconut|
- Stir together oats, sugar, and cocoa in a bowl. Add butter or margarine and mix ingredients with your hands to make a thick dough. Mix in coffee, vanilla extract, and melted chocolate until thoroughly blended.
- Place flaked coconut in a small bowl. Pinch off small amounts of dough and roll between your hands to make small balls, about 1 1/2 inches in diameter. Roll balls in flaked coconut. Balls are ready to eat or can be refrigerated for 2 hours to become firmer.
