Microwave Blueberry Mug Muffin

This blueberry cake isn’t too sweet on its own, making it a yummy ,all ingredients except blueberries in an oversized microwave-safe mug.

Ingredients

14 cup all-purpose flour
1 tbsp brown sugar
12 tsp baking powder
14 tsp kosher salt
12 tsp ground cinnamon
1 tbsp coconut oil, liquid, but not hot
2 tbsp almond milk
14 cup blueberries

Directions

  1. In a microwave safe cup or ramekin, mix together flour, baking powder, salt, and cinnamon. Add coconut oil, almond milk, and blueberries and stir until well combined. Microwave on High for 1 minute or until the muffin has risen and is cooked through.
