Mexican Squash and Ground Beef Casserole

Great way to use up all of the yellow squash that people keep giving me! I followed the recipe except I used a can of fire roasted tomatoes. Will definitely make it again!

I made this exactly like the recipe but tasted it before putting it in the casserole for baking. Good thing I did! It was a pile if tasteless blah that we would not have enjoyed eating. So I doubled up in the spices, especially paprika, added more tomatoes, crushed up a small hand full of Chili Cheese Fritos I happened to have and mixed them in, tasted for flavor with each addition, and poured into casserole. I sprinkled most of the cheese on, then spread more Fritos around the edges and some in the middle, added the remaining cheese and popped it in the oven. Then it was delicious and flavorful.

Omg I made this tonight and it turned out so good. I used 2 cans of roasted and basil and garlic tomatoes. I also added a can of green peppers. I used 1 pound of Italian sausage and 1 pound of hamburger. Topped it off with crushed corn chips. I also drained the tomatoes. Everyone loved it.

A good recipe. I made a bit of substitutions as I didn’t have smoked paprika. Instead I used taco seasoning ( I mixed it with water on the side before adding to meat and veggies) I also turned it into a lasagna with a no boil noodle. I cooked it at 400 for 20 minutes then brought it down to 350 for 5 minutes and added Colby cheese instead of cheddar.
