Mexican Chicken Corn Casserole

This easy recipe combines Mexican cheeses and seasonings with rice and tomatoes for a chicken casserole.

Ingredients
  • 1½ cups Cooked Chopped Chicken
  • 2 Cups Cooked Rice
  • 1½ – 2 cups Corn
  • ½ Cup Tomato Sauce
  • ½ Chopped Onion
  • 1 14.5 oz can diced tomatoes
  • 1 Cup cheese (any kind)
  • 1 Tblsp. Taco Seasoning (you can add more if you like)
  • Black Beans (optional)
Instructions
  1. Mix all ingredients together, except ½ cup cheese
  2. Put into a 2 quart pan and top with remaining cheese
  3. Bake in a 350 degree oven for 20 – 25 min
