Ingredients :
- 2 cups (8 ounces) shredded part-skim mozzarella cheese, divided
- 1/2 cup fat-free sour cream, divided
- 1/4 cup (1 ounce) grated fresh Parmesan cheese, divided
- 1/4 teaspoon black pepper
- 3 cloves garlic, minced
- 1 (14 ounce) can artichoke hearts, drained and chopped
- 2 (8 ounce) packages 1/3-less-fat cream cheese, at room temperature
- 1 (10-ounce) package frozen chopped spinach, thawed, drained and squeezed dry
Preparation :
- 1. Preheat oven to 350°F. Spray 1 1/2-quart baking dish with nonstick spray.
- 2. Combine 1 1/2 cups mozzarella, sour cream, 2 Tablespoons Parmesan, pepper, garlic, artichoke hearts, cream cheese and spinach in a large bowl. Stir until well-blended. Spoon the mixture into the prepared baking dish. Sprinkle with 1/2 cup mozzarella and the remaining 2 Tablespoons Parmesan.
- 3. Bake for 40 minutes or until bubbly and golden brown on top. Serve with vegetables or chips (extra calories for the chips!)
