1 bag frozen tater tots (28 ounces)
1 lb. cream cheese
1 cup sour cream
1 lb. bacon (reserve 2 tablespoons for topping)
4-6 jalapenos, chopped
2 1/2 cups Mexican cheese, shredded
6 green onions, finely chopped
1) Preheat oven to 425. Spray a casserole dish or deep baking pan with cooking spray, then line with a single layer of tater tots turned on their sides. Bake on 425 for 15 minutes, until they are golden and crispy.
2) Reserving ½ cup cheese and two tablespoons bacon, mix all ingredients in a bowl until combined. Spread mixture on top of tater tots in an even layer and put it back into the oven for 10 minutes.
3) You’re almost done! Remove dish from oven and sprinkle reserved cheese and bacon on top. Bake for 10 minutes until everything is melty, gooey and just the way you like it. Enjoy!
