Healthy Banana Cranberry Muffins

These tasty muffins are a good way to use up over-ripe bananas and are great.

 

Ingredients

cooking spray
3 ripe bananas, mashed
1 cup whole wheat flour
1 cup quick-cooking oats
3 eggs
1/2 cup wheat germ
1/2 cup maple syrup
1/2 cup coconut oil
1/4 cup ground flax seed
1 tablespoon ground cinnamon
2 teaspoons vanilla extract
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon sea salt
3/4 cup dried cranberries
1/4 cup chopped pecans

Directions

Preheat oven to 350 degrees F (175 degrees C). Spray 12 muffin cups with cooking spray.
Combine bananas, flour, oats, eggs, wheat germ, maple syrup, coconut oil, ground flax seed, cinnamon, vanilla extract, baking powder, baking soda, and sea salt in a large bowl until batter is well mixed; fold in cranberries and pecans. Fill muffin cups with batter.
Bake in the preheated oven until a toothpick inserted in the center comes out clean, 25 to 28 minutes.
