A no-fuss recipe for simple baked chicken breasts with a Greek seasoning blend and plenty of fresh lemon flavor.



  • 4 skinless, boneless chicken breast halves;
  • 1 cup extra-virgin olive oil;
  • The juice from 1 lemon;
  • 2 garlic cloves, minced;
  • ½ tbsp. dried oregano;
  • ¼ tsp. paprika;
  • 1 or 2 lemons, sliced;
  • Sea salt and freshly ground black pepper;


  1. In a bowl, combine the olive oil, garlic, paprika, lemon juice, oregano, and season with salt and pepper to taste.
  2. Place the chicken in a marinating container (glass or plastic; no metal), and cover with marinade.
  3. Cover and refrigerate for at least one hour or overnight.
  4. Preheat your oven to 400 F.
  5. Place the chicken in a roasting pan, and cover each piece with a slice of lemon.
  6. Place in the oven and bake for 30 to 40 minutes.
