Gingerbread Biscotti




13 cup vegetable oil
1 cup white sugar
3 egg
14 cup molasses
2 14 cup all-purpose flour
1 cup whole wheat flour
1 tbsp baking powder
1 12 tbsp ground ginger
34 tbsp ground cinnamon
12 tbsp ground cloves
14 tbsp ground nutmeg


  1. Preheat oven to 375 degrees F (190 degrees C). Grease a cookie sheet.
  2. In a large bowl, mix together oil, sugar, eggs, and molasses. In another bowl, combine all-purpose flour, whole wheat flour, baking powder, ginger, cinnamon, cloves, and nutmeg. Mix dry ingredients into wet ingredients to form a stiff dough.
  3. Divide dough in half and shape each piece into a roll the length of the cookie sheet. Transfer rolls to the cookie sheet and pat them down to flatten the dough to 1/2 inch thickness. Bake for 25 minutes, then remove from the oven and set aside to cool.
  4. When the loaves are cool enough to handle, use a serrated knife to cut them into 1/2 inch thick diagonal slices. Place slices back on the cookie sheet and bake for an additional 5 to 7 minutes on each side or until toasted and crispy.
