I am excited about Spring, which will be officially here this Friday on March 20. In Southern California, we have been having spring-like or actually summer-like weather for a while. However, I am sure many of you are anticipating the warmer weather of spring.

For me, I am excited about the farmers market and spring produce. Fresh, organic, healthy vegetables and greens. I will be sharing more vegetable recipes in the next two months or so, just because I love the idea of eating lots of vegetables in Spring and that I am trying to teach my 4-year old to eat more greens.

Today, let’s talk about asparagus. I absolutely love asparagus, especially young asparagus with tender stems. They are skinny and you can practically eat everything without having to cut off the stems and there is no need to peel away the hard skin as everything is so tender.

One of the easiest recipes to make over the stovetop is garlic butter sauted asparagus. You don’t even need to pre-heat or use your oven to roast because this recipe takes only 10 minutes and the taste is absolutely delightful. Just saute the asparagus with some butter, lots of garlic, and season with salt, pepper! If you like, add a squirt or two of lemon juice. It really doesn’t get any easier than that.

Garlic butter sauteed asparagus is a great side dish that goes well with anything: salmon, chicken, shrimp, and meat. Make it tonight!
