  • 4 ripe bananas (thinly sliced)
  • 3 eggs (beaten)
  • 1 ¼ cups milk (room temperature)
  • 1 ¼ cups water (room temperature)
  • 2 ½ tbsp granulated sugar
  • 1 tbsp dry yeast powder
  • 1 pinch of salt
  • 3 cups sifted wheat flour
  • Oil (for frying)

Instructions

  1. In a large bowl, mix bananas, eggs, milk, water, sugar, yeast, and salt until smooth using a hand mixer (or blender).
  2. Add sifted flour and whisk until combined. Let the batter sit for 1 hour to ferment.
  3. Heat a skillet on medium-low, add a drizzle of oil, and spread it with a brush.
  4. Pour 2 scoops of batter into the skillet and cook for 2 minutes. Flip and cook for another 2 minutes.
  5. Remove and drain excess oil on paper towels. Repeat until all the batter is used.
