As I was growing up, my grandma would make the peanut butter version of these every year, and I absolutely loved them. I still do, but recently I’m more inclined to switch them up now and then for this snowy, festive version. Their flavor is a little more simple, they’re a little more straightforward in their sweetness, but the process is just as easy as my grandma’s and they’re every bit as addictive.
I personally love to have a few easy no-bake treat options up my sleeve during the holidays. There’s already so much other stuff on the to-do list, it’s nice to be able to whip something special up quickly that you don’t have to fuss over or make multiple trips into the kitchen to check on. These haystacks are exactly that kind of treat, and they also happen to be a guaranteed crowd-pleaser. (Really though, everyone loves these.)
They truly couldn’t be easier to make. All you do is melt the white chocolate chips. (The microwave is fine, you don’t even need to pull out a saucepan for these!)
And toss that with some crispy chow mein noodles and peanuts. (Go ahead and eat a few of the noodles right out of the can. I can’t help it either.)
And then you spoon the mixture out onto some wax paper or a silicone mat, dust them with some holiday-appropriate sprinkles and wait for them to set. That’s it! You can pop them in the fridge to speed up the process, but they don’t take long to set at room temperature.
If you’re putting together some cookie tins as gifts, these are a great option to make while your other cookies are in the oven. They’re that quick… and creamy and crunchy and sweet and salty and absolutely delightful too.
- 2 (12 oz) packages white chocolate chips
- 1 (5 oz) can crispy chow mein noodles
- 1/2 cup salted peanutsSprinkles, optional
- Line a surface or baking sheet with wax paper.
- In a large microwave-safe bowl, microwave the white chocolate chips in 30-second intervals, stirring in between, until melted and smooth.
- Add the chow mein noodles and peanuts, stirring quickly to coat.
- Working quickly, drop by the spoonful onto wax paper.
- Top with sprinkles and let cool until set. Enjoy!
