Cuban-Style Black Beans

Serve this with white rice for a dinnertime side dish or alongside ham and eggs for a satisfying breakfast.


2 tablespoons olive oil
1 teaspoon minced garlic
1 (15.5 ounce) can black beans, drained
1 green bell pepper, chopped
1/2 sweet onion, chopped
1/2 (12 ounce) can light beer
1 tablespoon fresh chopped cilantro, for garnish


Heat the oil in a skillet over medium heat; cook the garlic in the oil 15 seconds. Stir in the onion and green pepper; cook and stir 10 minutes. Pour in the black beans and beer; simmer until thick, about 15 minutes; garnish with cilantro.
