Creamy Chocolate Cupcakes

 

Ingredients

  • 3 cups flour
  • 1 3/4to 2 cups sugar
  • 1/2cup cocoa
  • 1 teaspoon salt
  • 2 teaspoons soda
  • 2/3cup oil
  • 2 cups water
  • 2 tablespoons vinegar
  • 2 teaspoons vanilla
  • 8 ounces cream cheese
  • 1 egg
  • 1/3cup sugar
  • 1/4teaspoon salt
  • 6 ounces chocolate chips

Instructions

Pre-heat oven to 350 degrees F.Combine and sift dry ingredients. Add oil, water, vinegar, and vanilla. Beat until smooth. Fill cupcake papers 2/3 full. Beat cream cheese, egg, sugar, and salt until fluffy. Fold in chips. Drop 1 heaping teaspoon of filling into each cupcake. Bake 25 minutes at 350 degrees F (180 C).Frost when cool, if desired.
