I must confess I didn’t quite follow the recipe because I creamed the butter and sugar like normal instead of melting it. I still got rave reviews for these cookies. Recipe courtesy of hostthetaste.com.
This is 90% of what I have been looking for in a chocolate chip cookie recipe. The chewiness in these cookies comes more from the sugar than from the flour, which is what I have been wanting and have had a hard time explaining to people. I used dark brown sugar just to ensure that extra chewy-sticky consistency. My only complaint (and it’s a minor one) is that the edges of the cookies did not thin out as they spread during cooking. At any rate, if you’re looking for a cookie whose chew comes from caramelization rather than gluten, this is a great one!
