Chicken and Veggies Stir Fry, Low Calorie and Super Yummy

A stir fry makes a terrific dinner since it come together really quickly and can be made very healthy. This skinny one is chock full of broccoli, pea pods, carrots, cabbage, onions and lean chicken breasts. Each huge, fiber rich serving has 264 calories, 6 grams of fat and 5 Weight Watchers SmartPoints. You’ll be so satisfied with this dish just the way it is but it can be served over brown rice, if desired.

Ever since I shared my 15-minute chicken and veggies a few months back, I’ve gotten a few requests for the stove-top version so here it is! Now you can make the chicken and veggies but on the stove-top instead of the oven.

The whole dish comes together very quickly and effortlessly. I would say the only prep in this dish is just chopping all the chicken and veggies. You can also prep the chicken and veggies ahead of time and freeze them in ziplock bags or you can cook them and store them in meal-prep containers in the fridge.

I used Italian seasoning as the primary seasoning but taco, cajun, bbq, or even ranch seasoning will work too! If you want to go the extra step, try adding bbq sauce or your favorite Asian stir-fry sauce!
