Slow Cooker Chicken Stew With Dumplings

For an easy one-pot meal, serve Giada De Laurentiis’ hearty Chicken Stew recipe with crusty bread, from Everyday Italian .


14 cup oil
1 cup onion, chopped
14 oz can diced tomatoes
2 cup chicken broth
1 tsp garlic, minced
1 tsp thyme
1 bay leaf
1 tsp salt
12 tsp black pepper
4 cup potato, diced
1 12 cup carrot, sliced
2 cup boneless, skinless chicken breast, chopped into 1 inch pieces



  1. Heat oil in large pot, saute onions for 2 minutes.
  2. Add next 7 ingredients.
  3. Bring to a boil.
  4. Add potatoes, carrots, and chicken.
  5. Simmer until vegetables are done, about 30 minutes.
  6. Thicken with cornstarch if you like a thicker stew.
