Carrot Cake with Cream Cheese Frosting

This carrot cake with cream cheese icing beats all others. It’s rich, dense, moist and full of flavour; perfect for the family or to feed a crowd.


2 cups flour
1 1/2tsp. Baking soda
1tsp. Allspice
2tsp baking powder
1/4tsp salt
2tsp cinnamon
11/2 cups sugar
1 cup oil
4 beaten eggs
2 cups grated carrot
1 14oz can pineapple do not drain

Mix flour,baking soda, baking powder, salt , allspice, cinnamon. Add sugar and oil and eggs and mix then add carrot and pineapple mix and put into greased and floured cake pan and bake at 350 for 70- 90 mins .. Cool and frost with cream cheese frosting ! Enjoy!!!

Cream cheese icing

4oz cream cheese
1 cup icing sugar
1/4 cup butter
1 tsp vanilla
cream butter and cream cheese add vanilla and add icing and mix!!!
