Breakfast Pitas with Chicken Sausage

Breakfast Pitas with Chicken Sausage are ready in under 10 minutes and will become a new favorite breakfast!

  • 2 pita breads
  • 1 tablespoon + 1 teaspoon olive oil, separated
  • 4 slices mozzarella cheese
  • 1 package Jone’s Dairy Farm All Natural Golden Brown Chicken Breakfast Sausage Patties
  • 2 large eggs
  • Salt and pepper
  • ¾ cup packed arugula or baby spinach
  • 1 avocado
  • 1 lemon
  • Salt and pepper
  1. Heat up the grill pan over medium high heat. Brush each side of each pita with ½ teaspoon olive oil.
  2. Grill 1-2 minutes on each side until slightly crisp.
  3. Remove from the grill and allow to slightly cool.
  4. Place 2 slices mozzarella cheese on each pita.
  5. Prepare the sausage in the microwave according to package directions. Place 2 sausages on top of each slice of mozzarella cheese.
  6. In a large skillet, add remaining 1 tablespoon olive oil over medium high heat. Crack the eggs directly into the pan and cook until the egg whites are set, about 2-3 minutes.
  7. Place one egg on top of the chicken sausages on each pita.
  8. Divide the arugula or spinach evenly between the two pitas.
  9. Slice the avocado and squeeze fresh lemon juice over the avocado.
  10. Place the sliced avocado over the spinach or on the side of each plate.
  11. Season with a pinch of salt and pepper and enjoy immediately.
