Is there anything better than waking up to an absolutely, positively, delicious breakfast casserole? What’s even better is when you can fully and completely prepare it the night before and all you have to do on the day of is pop it in the oven and enjoy your morning while it cooks away. That is the beauty of this recipe. Do you enjoy Corned beef hash? My husband sure does. He is obsessed with that for breakfast.
It just becomes such a hassle and mess to prepare in the mornings. But this recipe has solved that problem for me. My husband has 3 day weekends every weekend, so I prepare this on Thursday night, bake it up on Friday morning and he enjoys it all three mornings.
He truly loves it that much. Also, it holds up pretty well in the fridge.
