This is an old weight watchers recipe that I adore. With minimal measuring and mixing, you can actually make your own minute mug cake mix that only needs water and a minute in the microwave to cook into a fluffy, single serving of cake!
My daughter is a huge fan of cupcakes – I am not. I mean, I post my fair share of them here, because really I do like cupcakes. But honestly, I think they’re a hassle to make. And then you have like 2 dozen leftovers. So we make this cake a lot in place of cupcakes whenever my daughter has a craving (which is often)!
She loves that she gets to decorate it, and I love that there is only one 🙂
Yahoo! Great little recipe, and great tasting too. I used lemon cake mix, and of course the angel food. Added blueberries to the dough, and when completed, I added blueberries to the top and some light whipped topping.
